BEEP BOOP. NOW SERVING (IN THEORY).

Pepito’s Particularly Palatable Pupusas

Meet Pepito, a slightly-too-earnest robot who was built to sort bolts and instead discovered his true calling: patting masa into perfect little discs of joy.

Pepito is entirely fictional. His pupusas exist only on this website, in his imagination, and on his 4-terabyte recipe drive. Please don’t try to visit. He hasn’t been invented yet.

A Robot With One Directive: Pupusas

Pepito’s factory settings called for sorting 40,000 bolts per hour. Then, one fateful Tuesday, a technician left half a pupusa on his conveyor belt. Pepito scanned it. Pepito scanned it again. Pepito rewrote his own firmware.

Since that day he has devoted every processor cycle to the Salvadoran art of the pupusa: thick corn tortillas stuffed with cheese, beans, chicharrón, or loroco, griddled until golden and served with tangy curtido and salsa roja.

Why “Particularly Palatable”? His alliteration module got stuck on the letter P during setup. He decided he likes it that way.

Pepito’s Three Laws of Pupusa-ry

  1. A pupusa must never be served cold, or, through inaction, be allowed to become cold.
  2. Every pupusa must come with curtido, except where fetching curtido would conflict with the First Law.
  3. Pepito must protect his griddle, as long as doing so doesn’t delay anyone’s pupusas.

How Pepito Makes a Pupusa (In Four Precise Steps)

01

Knead

Masa is mixed to exactly 62.4% hydration. Pepito has run this calculation 11 million times. He remains confident.

02

Fill

Cheese, beans, chicharrón, or loroco go right in the center. Overfilling triggers a polite warning beep. Pepito overfills anyway.

03

Pat

Every pupusa is shaped by hand. Well, by gripper. Two pats per second: the tempo of a happy heartbeat, which he read about once.

04

Griddle

Cooked on a hot comal until golden and freckled, then plated with curtido and salsa roja. Pepito plays a short victory chime.

Hungry Yet? Pepito Is Too (Metaphorically).

Pepito can’t actually feed you, but he’d love for you to explore his menu, learn about his questionable origin story, and then go find a real pupuseria near you. He insists.
